Here is the link to my article on Hosted Exchange migration:

This article talks about my experiences with migrating from a hosted Exchange 2003 environment to an in-house Exchange 2007 environment.

In short, there are several gotchas with the process.  Setting up a secondary domain and DNS for testing and migration was the simplest part.  The actual migration and some configuration issues that cropped up afterward were what turned out to be the biggest learning experiences.  Client data written out to pst files did not close in a timely fashion due to write caching issues, so many mailboxes had to be re-exported. In addition, custom X500 addresses had to be created to mimic the username and domain of the hosted service for all users so that replies to old emails resolve correctly.

None of these issues showed up in initial testing.
